Smoked whitefish is the classic of the Great Lakes smokehouses. It takes a long brine, a serious pellicle, and about 2 hours at 225°F to reach 145°F. Done right the flesh comes off in big opaque petals – and it is the base for the best smoked fish dip you will ever make.

How to smoke whitefish

  1. Brine 6 to 8 hours. Whitefish is delicate and benefits from the longer cure, which firms it enough to survive the grate.
  2. Air-dry hard. Rest uncovered in the fridge 2 to 4 hours. A well-formed pellicle is what gives traditional smoked whitefish its lacquered skin.
  3. Smoke at 225°F for roughly 2 hours to 145°F internal. Use a rack or perforated pan – it is fragile when hot.
  4. Cool before handling. It firms as it cools and comes off the bone in clean sheets.

Whitefish is the traditional base for smoked fish dip: flake the cooled meat and fold it into cream cheese, sour cream, lemon, dill and a little hot sauce.

Best wood for whitefish

Seafood wants mild wood. Alder is the traditional choice, with apple, cherry, maple and pecan all excellent. Avoid mesquite and go easy on hickory – what suits a fourteen-hour brisket will overwhelm a short seafood cook.
