How to Smoke Baby Back Ribs – Time and Temp

Baby back ribs take about 5 hours at 225°F, and unlike brisket or pork butt there is no internal temperature that tells you they are done. Ribs are finished by feel, not by number. This page covers the straightforward unwrapped method, which is the one to learn first.

Time and temperature

Run the smoker at 225 to 250°F. At 225°F a standard rack takes roughly 5 hours; at 250°F closer to 4. Baby backs come from the loin, so they are leaner and smaller than spare ribs and they cook faster. If you are cooking spare ribs instead, add about an hour.

Internal temperature is a weak signal on ribs because the probe keeps hitting bone. Use it as a rough guide only: the meat is usually right somewhere around 195 to 203°F, but the tests below matter more.

The bend test

Pick the rack up with tongs about a third of the way along. When it is ready, the rack bows deeply and the surface cracks. If it stays stiff, it needs more time. If it threatens to break in half, you have gone past bite-through into fall-off-the-bone.

The second test is the toothpick: slide one between the bones. It should go in with almost no resistance, like probing warm butter.

Do you need to wrap?

No. Unwrapped ribs give you the best bark and the cleanest bite. Wrapping in foil speeds things up and adds moisture, but it softens the bark and makes it very easy to overshoot into mushy. If you want the wrapped approach on a schedule, see the 3-2-1 method.

Membrane, rub and smoke

  • Pull the membrane off the bone side. Slide a butter knife under it, grip with a paper towel and peel. It never renders, and it blocks smoke and rub.
  • Rub can go on right before the cook. Ribs are thin, so there is nothing to gain from a long dry brine.
  • Wood: apple and cherry for a mild, sweet smoke and good colour; hickory if you want it assertive.

What temperature are baby back ribs done at?

There is no reliable target number. Ribs are done by feel, usually somewhere around 195 to 203°F, but the bend test and the toothpick test are what you should trust.

Should ribs fall off the bone?

Not if you are judging by competition standards. Properly cooked ribs give a clean bite that leaves a mark in the meat and keeps the rest of the rack intact. Fall-off-the-bone is technically overcooked, though plenty of people prefer it at home.

Do I have to remove the membrane?

Yes, it is worth the thirty seconds. The membrane never breaks down, so it turns leathery and stops rub and smoke reaching the meat underneath.
