No reliable temp exists for ribs — the rack tells you. Pick it up from one end with tongs: competition-done cracks the surface and a bite pulls clean leaving a mark; fall-off-the-bone folds until it nearly breaks. A toothpick between the bones should slide like butter.

FAQ

Remove the membrane? Always — butter knife under it at one bone, grip with a paper towel, peel. (It’s in your plan’s trim step.)

When do I sauce? Last 20–30 minutes so the glaze sets without burning. The calculator schedules it.
