How to smoke smoked chicken wings – time and temp

Smoke wings at 250 F for 45 minutes to an hour to take on smoke, then finish hot – 400 F+ or over direct coals – until the skin is crisp and they hit about 175 to 185 F. A little baking powder in the rub dries the skin for extra crunch. Sauce right at the end.

  • Two-zone it: low smoke for flavor, then high heat for crispy skin.
  • A pinch of baking powder in the rub crisps the skin.
  • Take them to 175 to 185 F; dark meat likes the extra heat.
  • Toss in sauce off the heat so it clings.
