How long to smoke chicken burgers

Ground poultry cooks to 165°F, full stop. These are the times to that safe pull:

Why 165°F, always

Grinding spreads bacteria through the whole patty, and poultry carries a salmonella risk beef does not – so USDA’s 165°F applies everywhere, with no informed-choice lane. FAQ

Is a little pink in a chicken burger okay? No. Unlike beef, there’s no safe-pink lane for ground poultry – 165°F is the number, measured in the thickest part of the patty.

Why do my chicken burgers fall apart? Ground chicken is wet and soft. Chill the mix, handle it minimally, and consider an egg or a little panko as a binder. Cold patties on an oiled grate hold together best.

Can I add cheese? Lay it on around 155°F so the closed lid melts it on the ride to 165°F.
