How long to grill carne asada

Carne asada is usually skirt or flank, sliced thin, so it cooks in minutes over the hottest fire you can build. Aim for a hard char on the outside and a juicy medium center.

The marinade is the soul

Real carne asada lives in its marinade: lime and orange juice, garlic, cumin, chiles, cilantro, and salt, often with a splash of oil and a little soy or Worcestershire for depth. Give the meat 4 to 8 hours in it. The acid tenderizes the thin cut fast, so do not run much past a day or the surface turns pasty. Pat it dry before grilling so it sears instead of steaming.

Char, rest, chop across the grain

Build the hottest fire you can and lay the meat right over it. You want dark, blistered edges, which is where the flavor is. Rest it a few minutes, then chop it into small pieces across the grain for tacos, or slice thin for platters.

Mesquite is the classic, and its bold, fast-burning smoke is made for this. Oak and hickory work too. Over a short, hot cook you only need a little.
