Why smoke a meatloaf?
The smoker does two things the oven never could: it wraps the whole loaf in wood smoke, and it forms a firm, seasoned bark on the outside. The result is deeper flavor, a pink smoke ring, and a caramelized glaze that beats any ketchup-topped oven version. It is also one of the most forgiving smokes there is.
Step 1: Mix and form
Use your favorite meatloaf mix – ground beef (or a beef-and-pork blend), egg, breadcrumbs or crushed crackers, grated onion, and seasoning. Do not overmix, or the loaf turns dense. Form it into an even loaf; a foil pan with holes, or a wire rack, keeps its shape while letting smoke reach all sides.
Step 2: Smoke to a safe 160 F
Smoke at 250 to 275 F until the center reaches 160 F, usually 2 to 3 hours. Because it is ground meat, 160 F is a hard USDA minimum – use a probe in the thickest part. In the last 20 to 30 minutes, brush on a barbecue or ketchup-brown-sugar glaze and let it set and caramelize.

Ground beef must reach 160 F internal, per USDA – non-negotiable for food safety. A leave-in thermometer takes the guesswork out. Rest 10 minutes before slicing so it holds together.

Go bold: hickory and oak stand up to the beef, while cherry adds color and a touch of sweetness. A little goes a long way on a 2 to 3 hour cook.
