How to smoke smoked lamb chops – time and temp

Reverse sear is ideal: smoke the chops at 225 to 250 F until they reach about 125 F internal (20 to 40 minutes depending on thickness), then sear hard for a minute per side. Carryover brings them to 130 to 135 F for medium-rare. Rosemary, garlic, and olive oil are the classic partners.
