How to smoke smoked turkey leg – time and temp

For that theme-park color and snap, cure the legs in a brine with pink curing salt for a day or two (optional but authentic), then smoke at 275 F until they reach 175 to 185 F, usually 2 to 3 hours. Dark meat loves the extra heat and turns silky.
