Real barbacoa is tender, chile-spiced shredded beef that pulls apart into juicy strands for the best tacos you will ever make at home. Smoke it first, braise it tender, and shred – here is the full method, plus a calculator that plans the whole cook to the minute.

What is barbacoa?

Barbacoa is a traditional Mexican method of slow-cooking beef with dried chiles, garlic, cumin, and lime until it shreds. Classically it is beef cheeks or head, wrapped and cooked low for hours. Our approach smokes the beef first for a wood-fired layer, then braises it tender – the best of both worlds.

Step 1: Pick your cut

Beef cheeks are the gold standard – rich, gelatinous, and made for this. Chuck roast is a widely available and excellent substitute. Season with a paste of rehydrated guajillo and chipotle chiles, garlic, cumin, oregano, and a splash of lime and vinegar.

Step 2: Smoke, then braise

Smoke the beef at 250 F until the bark sets, then transfer it to a covered pan with a little beef broth, the chile paste, and a bay leaf. Keep cooking – on the smoker or in the oven – until it reaches about 200 to 205 F internal and shreds with no resistance, usually 6 to 9 hours total. Rest, then shred and moisten with the braising juices.

What temperature is barbacoa done?

About 200 to 205 F internal – like any tough, collagen-rich cut, it needs to go well past “done” to become shreddable. The braise keeps it from drying while the connective tissue melts. If it is not shredding easily, it is not ready.

Build the tacos

Pile the shredded barbacoa onto warm double corn tortillas with diced white onion, chopped cilantro, and a squeeze of lime. Serve the strained braising liquid (the consome) on the side for dipping. For a full taqueria spread, add al pastor and carne asada.
