Smoked Chuck Roast Recipe (Poor Man’s Brisket)

A smoked chuck roast is the best-kept secret in barbecue: for a fraction of the price of a brisket, this humble cut turns beefy, tender, and rich when you take it low and slow. Slice it like brisket or pull it for sandwiches. Here is the full method, plus a calculator that plans your cook to the minute.

Why chuck roast is “poor man’s brisket”

Chuck comes from the shoulder and is loaded with the same collagen and fat that make brisket special. Cooked past 200 F, that connective tissue melts into gelatin and the meat goes pull-apart tender. It is smaller and cheaper than a packer brisket, cooks in far less time, and is available at any grocery store – which is why pitmasters call a sliced chuck roast poor man’s brisket.

Step 1: Season and smoke

A 50/50 coarse salt and pepper rub is traditional (add garlic if you like). Smoke the chuck at 250 F. When the bark is set and it reaches about 165 to 170 F, you can wrap it in butcher paper or foil to push through the stall faster – or leave it naked for maximum bark.

Step 2: Take it all the way to tender

Keep cooking until the roast reaches about 200 to 205 F internal and probes like warm butter, usually 6 to 8 hours total depending on size. This is the step people rush – a chuck pulled at 190 F is tough. Cook to feel, not the clock. Rest at least 30 minutes, then slice against the grain, or pull it with two forks.

What temperature is smoked chuck roast done?

About 200 to 205 F internal, cooked until fork-tender – the same target as brisket. Below that, the collagen has not broken down and the meat will be chewy. Use the probe test: it should slide in with no resistance.

Slice it, pull it, or cube it

Slice a well-marbled chuck against the grain for brisket-style plates. Pull it for sandwiches and tacos. Or cube and glaze it into poor man’s burnt ends – the candy of the cheap-cut world. Best woods: oak, hickory, and pecan.
