How long to smoke a chuck roast

At 225°F, plan about 100 minutes per pound for pulled (pull at 203°F) or 85 minutes per pound for sliced (pull at 190°F). A typical three-pound chuck runs six to nine hours with the stall. Hot and fast at 300°F roughly halves it. Wrap once the bark sets to push through the stall.

Poor man’s burnt ends

Chuck makes outstanding burnt ends: smoke to about 195°F, cube it, toss with sauce, and back in the pit to candy up. All the payoff of brisket point burnt ends from a cheaper cut.

Why chuck roast is the easy brisket

Chuck is smaller, cheaper, and higher in fat and collagen, so it stays juicy and forgives an overshoot. It is the ideal place to learn a low-and-slow collagen cook before you commit to a fourteen-pound packer.
