How to smoke smoked chicken quarters – time and temp

Smoke leg quarters at 275 to 325 F until they reach 175 to 185 F in the thigh – dark meat is most tender past the safe minimum. The higher pit temp crisps the skin. Season simply or sauce in the last 15 minutes.
