Smoke wings at 250 F for 45 minutes to an hour to take on smoke, then finish hot – 400 F+ or over direct coals – until the skin is crisp and they hit about 175 to 185 F. A little baking powder in the rub dries the skin for extra crunch. Sauce right at the end.
