Smoke the lamb loin at 225 to 250 F until it reaches about 125 F internal (30 to 50 minutes), then sear hard to build a crust. Carryover takes it to 130 to 135 F for medium-rare. Because it is lean, do not push past medium. Rest, then slice into medallions across the grain.
