How to smoke tender and tasty smoked chicken thighs – time and temp
Smoke bone-in, skin-on thighs at 275 to 325 F until they reach 175 to 185 F internal – higher than the 165 F safe minimum, because dark meat gets more tender the further you take it. That extra heat also crisps the skin. Sauce in the last 10 to 15 minutes if you like.
