Smoked Turkey Thighs

Turkey thighs are the dark-meat sleeper: cheap, juicy, and nearly impossible to dry out. Set your serving time below and the calculator plans the cook.

How long to smoke turkey thighs

At 225°F, thighs run roughly three hours; hot and fast at 325°F for crispier skin runs closer to 90 minutes. Take dark meat higher than the 165°F minimum, to about 175°F, where the connective tissue renders and it turns silky.

Crispy skin

Low and slow leaves poultry skin rubbery. Dry the skin uncovered in the fridge first, and finish hot (a 325 to 350°F stretch or a quick sear) to crisp it.

Turkey thighs on a pellet grill

Run 300 to 325°F for better skin, apple or cherry wood, and pull around 175°F. A brine keeps them extra juicy.
