Smoked Burger Calculator – Times, Temps & the Bacon Blend

Smoked burgers are the easiest win on the pit – until the timing catches you flat. Set your dinner time below and the calculator plans backward through the grind, the rub, the smoke, and the cheese melt, and puts every step on your phone. Pick your patty size and how you like it cooked; it does the rest.

How long to smoke burgers

At 225°F, low and slow, a burger takes far longer than the grill – that’s the whole point, it drinks smoke the entire time. These are cook-to-Well (160°F) times; pull earlier for a pinker center if you’re grinding fresh (see the doneness note below).

Never press the patties – that squeeze is the juice leaving. On the smoker there’s no need to flip; over direct grill heat, flip once at the halfway mark.

What temp are burgers done?

USDA calls for 160°F on ground beef, because grinding spreads surface bacteria through the whole patty. That’s why Well is preselected. Cooking to a pinker Medium or Medium-Rare is an informed choice – legitimate only with fresh-ground, same-day beef from a butcher you trust, never pre-formed frozen patties. The calculator will plan whatever you choose and flag the safety line so you’re never guessing. The pink smoke ring stays pink at any temp; trust the thermometer, not the color.

The Bacon Blend

Work 25–30% ground bacon into the grind (or fold in chopped cooked bacon) and you get smoke, salt, and fat insurance in one move – the extra fat is what keeps a well-done burger from drying out. There’s raw pork in the blend now, so the calculator selects Well by default and runs the bacon patties a touch longer to render that fat. Pick the ¼, ⅓, or ½ lb Bacon Blend style and plan it like any other.

Do you rest a burger?

Barely. A thin patty has no meaningful thermal gradient to redistribute – resting is for roasts. Five minutes is all you need, and that’s really the cheese-melt-and-dress-the-bun window. Lay cheese on about 10°F under your pull temp and let the closed lid melt it; toast the buns over the fire in the last few minutes. Then it goes straight from the pit to the plate.

Best wood for smoked burgers

Hickory, oak, and pecan are the backbone – enough backbone to stand up to beef without turning acrid over a short cook. Go easy; a burger’s short time on the pit means strong woods like mesquite can overpower fast.

FAQ

Can you smoke frozen burgers? You can, but never below 160°F – pre-formed frozen patties are exactly the case USDA’s floor exists for. Add roughly 50% to the times above and temp the thickest one.

Smoke then sear? Yes – smoke to about 10°F under target, then hit them on a screaming-hot grate or cast iron for crust. That’s the burger version of a reverse sear, and the calculator’s cook stages can build it.

Why is my smoked burger pink inside? The smoke ring. It’s a harmless reaction between smoke and the meat’s myoglobin and has nothing to do with doneness – check the temp, not the color.
