How to cook a tomahawk: reverse sear

That thick bone-in ribeye is exactly the cut reverse sear was built for. Smoke it low at 225°F until it’s about 10°F under your target, rest it briefly, then sear hard over direct heat or in cast iron for the crust. You get edge-to-edge doneness with no gray band and a bark you can’t rush. These are the pre-sear pull temps – the sear carries it the last few degrees to the plate.

Smoke, then sear

Two zones is the whole game: indirect at 225°F for the smoke, then a direct zone or cast iron hot enough to hurt for the sear. Pull off the smoke a touch under target, because the sear will drive the internal temp up. A short rest between the two lets the surface dry so it crusts instead of steaming. Butter, garlic, and thyme in the sear pan if you’re feeling it.

Oak and hickory carry beef; pecan rounds them out; a little mesquite is Texas in a hurry – big flavor, use with intent on a cut this good.
