Tender and Tasty Smoked Chicken Thighs – Time and Temp

Smoked chicken thighs are the most forgiving thing on the pit: dark, juicy meat that is nearly impossible to dry out, with skin that crisps up beautifully. A perfect weeknight smoke. Set your dinner time below and we will plan it backward to the minute.

How to smoke tender and tasty smoked chicken thighs – time and temp

Smoke bone-in, skin-on thighs at 275 to 325 F until they reach 175 to 185 F internal – higher than the 165 F safe minimum, because dark meat gets more tender the further you take it. That extra heat also crisps the skin. Sauce in the last 10 to 15 minutes if you like.

Tips

  • Take thighs to 175 to 185 F – dark meat is better past the safe minimum.
  • Run hotter (275 F+) for crispy skin.
  • Bone-in, skin-on holds moisture and flavor best.
  • Sauce late so it sets without burning.
