Smoking Whole Chicken (Spatchcocked) – Time and Temp

A spatchcocked smoked chicken cooks faster, more evenly, and with far crispier skin than a whole bird left round. Flatten it, run a little hotter, and you get juicy meat and bite-through skin. Set your dinner time below and we will plan the cook backward to the minute.

How to smoke smoking whole chicken (spatchcocked) – time and temp

Spatchcock the bird (cut out the backbone and press it flat), then smoke at 300 to 325 F – higher than most smokes, which is the secret to crisp skin – until the breast reaches 165 F, usually 60 to 90 minutes. A dry brine the night before dries the skin for even better crackle.

Tips

  • Spatchcock for even cooking and crispy skin.
  • Run hotter than usual (300 F+); low and slow leaves rubbery skin.
  • Dry-brine uncovered overnight for the crispiest skin.
  • Pull at 165 F in the thickest part of the breast.
