Tomahawk Steak Calculator – Reverse Sear Times by Doneness

A tomahawk is a ribeye with a handle and an audience – too much steak to guess on. Set your dinner time below and the calculator plans the reverse sear backward: the gentle smoke up to your target, the rest, and the screaming-hot sear that finishes it. Pick your doneness; it hits the number edge to edge.

How to cook a tomahawk: reverse sear

That thick bone-in ribeye is exactly the cut reverse sear was built for. Smoke it low at 225°F until it’s about 10°F under your target, rest it briefly, then sear hard over direct heat or in cast iron for the crust. You get edge-to-edge doneness with no gray band and a bark you can’t rush. These are the pre-sear pull temps – the sear carries it the last few degrees to the plate.

Doneness Pull from smoke Plate temp (after sear)
Rare ~115°F ~120°F
Medium-Rare ~125°F ~130°F
Medium ~135°F ~140°F
Medium-Well ~145°F ~150°F
Well ~155°F ~160°F

Medium-rare is the house call on a ribeye – enough heat to render the marbling, not so much you lose it. A 2-inch tomahawk runs roughly 60–90 minutes of smoke depending on your target, then just minutes on the sear.

Smoke, then sear

Two zones is the whole game: indirect at 225°F for the smoke, then a direct zone or cast iron hot enough to hurt for the sear. Pull off the smoke a touch under target, because the sear will drive the internal temp up. A short rest between the two lets the surface dry so it crusts instead of steaming. Butter, garlic, and thyme in the sear pan if you’re feeling it.

Best wood for tomahawk

Oak and hickory carry beef; pecan rounds them out; a little mesquite is Texas in a hurry – big flavor, use with intent on a cut this good.

FAQ

What temp for a medium-rare tomahawk? Pull it off the smoke around 125°F, then sear – carryover and the crust bring it to about 130°F on the plate.

How long does a tomahawk take? Roughly an hour to ninety minutes of low smoke for a 2-inch steak, plus a few minutes of sear. Thickness drives it more than weight – the calculator plans to your doneness.

Do I sear first or last? Last. Reverse sear – smoke low, sear hot at the end – gives even doneness and a better crust than searing a cold steak first.

Should I rest a tomahawk? A short rest before the sear helps it crust; after the sear, a few minutes is plenty. It’s a steak, not a brisket – carryover is small and quick.
