Chuck roast has the same rich, collagen-heavy structure as the brisket point, so when you smoke it low and slow it turns pot-roast tender. You smoke the roast whole, cube it once it is tender, glaze the cubes with barbecue sauce, and set them back in the smoker to caramelize. The payoff is beefy, tender burnt ends at a weeknight price.

Time, temperature, and technique

Smoke the chuck at 250 to 275 F until it reaches about 200 to 205 F internal and probes tender, usually 6 to 8 hours. Cube it into 1.5 inch pieces, toss with sauce and a little brown sugar, and return to the smoker in a pan for 45 to 90 minutes to set the glaze.
