Smoked Rabbit: Times, Temps & Why It Needs Bacon

Rabbit has almost no fat whatsoever – less than any other common game meat. Brine it, bard it with bacon, and smoke at 250°F for about 3 hours to 160°F.

How to smoke rabbit

  1. Brine 6 to 8 hours. Essential on meat this lean.
  2. Quarter it unless the rabbit is small – the loin cooks much faster than the hind legs.
  3. Bard with bacon or baste with butter throughout.
  4. Smoke at 250°F to 160°F, roughly 3 hours, then rest.

Pitmaster tip

Pull the loin sections early if you cooked the rabbit whole – they finish well before the hind legs and will be dry by the time the legs are done.

Best wood for rabbit

Wild game carries strong flavour and stands up to strong wood. Oak and hickory are the workhorses for red game; cherry and apple suit game birds and add colour. Mesquite works on venison if you like it assertive, but go mild on anything with feathers.
