Smoked Wild Boar: Times, Temps & the 160F Safety Rule
Wild boar cooks like pork butt’s leaner, tougher cousin – and it comes with a hard safety rule. Smoke the shoulder at 250°F, wrap earlier than you would farmed pork, and take it to 200°F until it pulls. It must reach 160°F minimum regardless of cut.
How to smoke wild boar
- Brine or inject. Wild boar is far leaner than farmed pork and dries out much faster.
- Smoke at 250°F and expect a long cook – a shoulder can run 10 hours or more.
- Wrap early, around 155-160°F. Farmed pork can ride the stall naked; wild boar usually cannot afford the moisture loss.
- Pull at about 200°F and probe-tender, then rest a full hour.

An older boar can be strong-tasting. An overnight soak in buttermilk or salted water noticeably mellows it, and a sweeter rub balances what is left.
Best wood for wild boar
Wild game carries strong flavour and stands up to strong wood. Oak and hickory are the workhorses for red game; cherry and apple suit game birds and add colour. Mesquite works on venison if you like it assertive, but go mild on anything with feathers.

What temperature is wild boar done?
160°F is the absolute safety minimum. For pulled shoulder you are going to about 200°F anyway, well clear of it.
Can you eat wild boar medium-rare?
No. Wild boar and feral hog can carry trichinella, and the reliable home protection is heat to 160°F. This is not a preference.
Is wild boar like regular pork?
Similar cuts, very different meat – leaner, tougher, darker and stronger flavoured. It needs more moisture help and an earlier wrap.
