Pheasant is exceptionally lean even by wild bird standards and dries out fast. Brine it, bard it with bacon, and smoke at 250°F for about 2 hours to 165°F.

How to smoke pheasant

  1. Brine 8 to 12 hours. Non-negotiable on a bird this lean.
  2. Bard the breast with bacon or a butter-soaked cloth – there is essentially no fat to self-baste.
  3. Smoke at 250°F to 165°F, roughly 2 hours for a whole bird.
  4. Rest 15 minutes, then carve.

Pitmaster tip

If your birds are wild-shot rather than farm-raised, check carefully for shot before cooking and expect a leaner, firmer bird than a pen-raised pheasant.

Best wood for pheasant

Wild game carries strong flavour and stands up to strong wood. Oak and hickory are the workhorses for red game; cherry and apple suit game birds and add colour. Mesquite works on venison if you like it assertive, but go mild on anything with feathers.
