Smoked Wild Duck Breast: Times, Temps & the Soak That Fixes It
Wild duck is dark, rich and nothing like the farmed duck in a restaurant – far leaner, and it can taste strongly of blood if you skip the soak. Soak it, then smoke at 250°F for about 45 minutes to 165°F.
How to smoke wild duck breast
- Soak 4 to 12 hours in salted water or buttermilk, changing it once. This draws out blood and removes the livery edge.
- Bard or wrap in bacon. Wild duck breast has almost no fat cap, unlike farmed duck.
- Smoke at 250°F to 165°F, about 45 minutes for a breast.
- Rest 10 minutes and slice thin across the grain.

Pluck rather than skin if you have the patience. The skin is the only fat the bird has, and skinned wild duck breast is very hard to keep moist.
Best wood for wild duck breast
Wild game carries strong flavour and stands up to strong wood. Oak and hickory are the workhorses for red game; cherry and apple suit game birds and add colour. Mesquite works on venison if you like it assertive, but go mild on anything with feathers.
