Smoking a Whole Turkey (Spatchcocked) – Time and Temp

Spatchcocking solves the fundamental problem with whole turkey: the breast is done at 165°F while the thighs want 175°F, and in an intact bird the breast is the part most exposed to heat. Removing the backbone and flattening the bird puts everything on one plane, so the whole thing finishes together.

Time and temperature

Run 300 to 325°F and plan on about 20 minutes per pound. A 14 pound bird takes roughly 4 to 5 hours, noticeably faster than the 6 to 7 hours the same turkey needs whole. Pull at 165°F in the thickest part of the breast.

Because the bird is flat, it also takes smoke more evenly and the skin crisps across the whole surface rather than just the top.

How to spatchcock

  1. Put the turkey breast side down on a board.
  2. Cut up each side of the backbone with heavy kitchen shears and remove it. Keep it for stock.
  3. Flip the bird over and press down firmly on the breastbone until you feel it crack and the bird lies flat.
  4. Tuck the wing tips behind the shoulders so they do not burn.

Good shears matter. A turkey backbone is substantially tougher than a chicken’s, and this is the one step where the wrong tool makes it genuinely difficult.

Why it is worth the trouble

  • Even cooking. Breast and thigh finish within a few degrees of each other instead of fighting.
  • Roughly a third less time, which matters enormously when the smoker is also cooking everything else on a holiday.
  • Much better skin, because the whole surface is exposed to heat and smoke.
  • It fits. A flattened bird slides onto a smaller smoker that could not take a whole one.

Brine and wood

Dry brine with kosher salt and leave it uncovered in the fridge overnight. The flattened shape gives the salt better access and the dry surface crisps well. Use apple, cherry or maple; poultry does not want heavy wood. Rest 20 minutes before carving.

How long does a spatchcocked turkey take to smoke?

About 20 minutes per pound at 300 to 325°F, so roughly 4 to 5 hours for a 14 pound bird. That is around a third faster than the same turkey cooked whole.

Is spatchcocking a turkey worth it?

Yes, for everything except presentation. It cooks faster and far more evenly, the skin crisps better, and it fits on smaller smokers. You just cannot serve the bird intact.

What temperature is spatchcocked turkey done at?

165°F in the thickest part of the breast, measured away from bone. Because the bird is flat, the thighs finish close behind rather than lagging.

Do I need special tools to spatchcock a turkey?

Heavy duty kitchen shears, or a sharp knife and some patience. A turkey backbone is much tougher than a chicken’s, so light shears will struggle.
