How to smoke smoking whole chicken (spatchcocked) – time and temp
Spatchcock the bird (cut out the backbone and press it flat), then smoke at 300 to 325 F – higher than most smokes, which is the secret to crisp skin – until the breast reaches 165 F, usually 60 to 90 minutes. A dry brine the night before dries the skin for even better crackle.
