How long to smoke cabrito

Run 250°F and let the calculator time it from your animal’s weight – a typical 20 lb dressed cabrito is an afternoon-long cook. Goat is lean where a hog is insulated, so moisture management is the whole game: mop or spritz every 45 minutes once the surface sets, and wrap in butcher paper (or banana leaves, the borderland move) when the color is right. The shoulders and legs pull at 195°F-plus; ribs and loin ride along and finish sooner.

Buying and prepping a cabrito

Look for a milk-fed kid goat, 18 to 30 lb dressed, from a halal butcher, Mexican carniceria, or a local goat farm – order ahead. Have it butterflied flat for a grate cook or quartered if your pit is small. Season simply: salt, pepper, garlic, a little oregano and lime – cabrito is about the meat and the smoke, not a bark program. About half the dressed weight comes off the bone frame, so a 20 lb cabrito serves 10 to 12 as the centerpiece.

Serving it right

Traditional service is by the cut – riñonada (loin and kidney fat, the prize), pierna (leg), paleta (shoulder) – with warm corn tortillas, charro beans, salsa verde, and lime.
