Smoked meatloaf is comfort food with a bark. The smoker gives it a flavor the oven never could, plus a glaze that caramelizes into candy. Set your dinner time below.

How long to smoke meatloaf

At 225°F, plan about 80 minutes per pound to a 160°F pull; a typical two-pound loaf runs two to three hours. Hot and fast at 300°F cuts it down. Shape it in a foil pan or free-form on a rack or mat for more bark.

When to glaze

Brush your glaze (ketchup-based or a barbecue sauce) in the last 20 to 30 minutes so the sugars set and shine without burning. Glaze too early and it scorches; too late and it stays wet.

Meatloaf on a pellet grill

Free-form on a grill mat at 225°F for maximum smoke and bark, hickory or oak. Pull at 160°F and rest before slicing so it holds together.
