Venison Jerky: Times, Temps & the Safety Step Most People Skip

Venison makes outstanding jerky precisely because it is so lean – fat is what turns jerky rancid. Marinate overnight, then dry at 170°F for around 5 hours until a strip bends and cracks but does not snap.

The step most people skip: the USDA recommends heating jerky meat to 160°F before or after drying, because low-temperature drying alone may not kill pathogens. Either start hot for the first stretch, or finish the dried strips in a 275°F oven for 10 minutes.

How to smoke venison jerky

  1. Trim every scrap of fat and silverskin. Fat does not dry and will spoil the batch.
  2. Slice 1/4 inch thick. With the grain for chewy, against for tender. Partially freezing makes slicing far easier.
  3. Marinate 8 to 24 hours – soy, worcestershire, garlic, pepper and a little heat is the classic.
  4. Dry at 170°F for 4 to 6 hours, rotating racks and leaving space for airflow.

Test a cooled strip, never a hot one. Warm jerky always feels more pliable than it really is, which is how batches get over-dried.

Best wood for venison jerky

Wild game carries strong flavour and stands up to strong wood. Oak and hickory are the workhorses for red game; cherry and apple suit game birds and add colour. Mesquite works on venison if you like it assertive, but go mild on anything with feathers.
