Smoked Catfish: Times, Temps & the Brine That Fixes the Flavor
Catfish smokes beautifully, and a brine is the whole trick – it firms the soft fillet and tames any muddy note from farm-raised fish. Brine, dry, then 225°F for about 90 minutes to 145°F.
How to smoke catfish
- Brine 3 to 4 hours. Salt, brown sugar and a splash of hot sauce or lemon is a classic southern combination.
- Rinse and dry to a pellicle, about an hour uncovered.
- Season with a cajun or blackening rub – catfish carries a bolder rub than most fish.
- Smoke at 225°F for around 90 minutes to 145°F, until it flakes.

Catfish fillets are soft. Use a perforated pan or well-oiled grate, and do not try to flip them – smoke them on one side the whole way.
Best wood for catfish
Seafood wants mild wood. Alder is the traditional choice, with apple, cherry, maple and pecan all excellent. Avoid mesquite and go easy on hickory – what suits a fourteen-hour brisket will overwhelm a short seafood cook.
