Smoked Lobster Tails: Times, Temps & the Butter Baste

Smoked lobster tails are a short, high-value cook: about 45 minutes at 225°F to 145°F. The technique that matters is butterflying the shell and basting with butter the whole way, so the meat never dries.

How to smoke lobster tails

  1. Butterfly the tail. Cut the top of the shell lengthwise with kitchen shears, gently lift the meat and rest it on top of the shell.
  2. Baste generously with melted butter, garlic and lemon before it goes on.
  3. Smoke at 225°F for around 45 minutes, basting every 15, until the meat is opaque and pearly at 145°F.
  4. Finish hot if you like – a couple of minutes under high heat firms the exterior.

Pitmaster tip

Resting the meat on top of the shell keeps it out of direct heat and lets smoke reach every surface, which is the whole point of butterflying.

Best wood for lobster tails

Seafood wants mild wood. Alder is the traditional choice, with apple, cherry, maple and pecan all excellent. Avoid mesquite and go easy on hickory – what suits a fourteen-hour brisket will overwhelm a short seafood cook.
