Smoked Halibut: Times, Temps & How Not to Dry It Out

Halibut is premium, gorgeous, and the easiest fish on this list to ruin. It is exceptionally lean, so there is no fat to save you if you overshoot. Brine it, baste it, and smoke at 225°F for around 75 minutes to exactly 145°F.

How to smoke halibut

  1. Brine 1 to 2 hours. Short but genuinely worth it for moisture retention.
  2. Dry to a light pellicle, about an hour uncovered in the fridge.
  3. Baste with butter or oil before it goes on and again halfway. Halibut has almost no internal fat.
  4. Smoke at 225°F to 145°F and pull immediately. It flakes into thick, pearly petals when it is right.

Pitmaster tip

Watch it like a hawk from 130°F onward. The difference between perfect halibut and dry halibut is about five degrees.

Best wood for halibut

Seafood wants mild wood. Alder is the traditional choice, with apple, cherry, maple and pecan all excellent. Avoid mesquite and go easy on hickory – what suits a fourteen-hour brisket will overwhelm a short seafood cook.
