Smoked Oysters: Times, Temps & the Half-Shell Method

Smoking oysters on the half shell keeps the liquor with the oyster, which is where the flavour lives. About 30 minutes at 225°F and they are ready – you are looking for the edges to curl and the liquor to bubble.

How to smoke oysters

  1. Shuck them, keeping the oyster and its liquor in the deeper half of the shell.
  2. Steady them on rock salt or a crumpled foil bed so they do not tip and spill.
  3. Top lightly – butter, garlic, a little hot sauce or parmesan.
  4. Smoke at 225°F for about 30 minutes, until the edges curl and the liquor bubbles at the rim.

Pitmaster tip

Discard any oyster that was open before shucking and did not close when tapped. Shellfish safety starts before the smoker.

Best wood for oysters

Seafood wants mild wood. Alder is the traditional choice, with apple, cherry, maple and pecan all excellent. Avoid mesquite and go easy on hickory – what suits a fourteen-hour brisket will overwhelm a short seafood cook.
