Smoked Smoked Sausage

Smoked sausage is easy to nail and easy to ruin. Keep the heat gentle so the casings stay taut instead of splitting, and pull at a safe internal temp. Set your time below and the calculator schedules it.

How long to smoke sausage

At 225°F, links take roughly two to three hours depending on thickness, until they hit 160°F internal (fresh pork or beef sausage). Go low and slow: direct heat blows the casings out and renders the fat before the inside cooks.

Keep the casings from splitting

Two rules: gentle heat, and do not let the internal temp race. Some pitmasters finish with an ice-water dip to set the casing and stop carryover. A water pan in the smoker keeps humidity up and the casings supple.

Sausage on a pellet grill

Indirect at 225°F, turn once or twice for even color, and pull at 160°F. Hickory, apple, or cherry all work; sausage is already seasoned, so let the wood play a supporting role.

FAQ

What temp is smoked sausage done? 160°F internal for fresh pork or beef sausage; 165°F if it contains poultry. Pre-cooked sausage just needs warming to 140°F.

Why did my sausage casings split? Too much heat, too fast. Drop the pit temp, avoid direct flame, and keep humidity up with a water pan.

How long does it take? Two to three hours at 225°F for typical links. The calculator plans your exact cook.
