Smoked Scallops: Times, Temps & the Sear Finish

Scallops take smoke fast and cook faster. Use large sea scallops, pat them bone-dry, and smoke at 225°F for about 30 minutes to 145°F. If you want a crust, hit them in a screaming-hot pan afterward – smoke first, sear last.

How to smoke scallops

  1. Use sea scallops, not bay. Bay scallops are too small and overcook before taking any smoke.
  2. Pat completely dry and remove the small side muscle. Moisture is the enemy of both smoke and searing.
  3. Optional 30-60 minute brine keeps them plump.
  4. Smoke at 225°F for around 30 minutes until opaque, then sear 60 to 90 seconds a side in butter if you want colour.

Pitmaster tip

Buy dry-packed scallops if you can. Wet-packed scallops are treated with a phosphate solution that makes them weep and refuse to brown.

Best wood for scallops

Seafood wants mild wood. Alder is the traditional choice, with apple, cherry, maple and pecan all excellent. Avoid mesquite and go easy on hickory – what suits a fourteen-hour brisket will overwhelm a short seafood cook.

How long do you smoke scallops?

About 30 minutes at 225°F to 145°F internal. They are done when opaque and firm but still springy.

Should you sear scallops after smoking?

It is optional but excellent. Smoke gives flavour, the sear gives crust – do the sear last, in a very hot pan.

Can you smoke bay scallops?

Not really. They are too small and overcook long before they take on smoke. Use large sea scallops.
