Tilapia is the fastest thing you can put on a smoker that still tastes like it was smoked. The fillets are thin and mild, so they take smoke in minutes and overcook in about the same time. A short brine, a light wood and a thermometer are the whole recipe: pull at 145°F, the moment the flesh turns opaque and flakes.

How long to smoke tilapia

At 225°F, figure about 45 minutes for standard fillets to reach 145°F at the thickest point. Thin tail ends finish first, so start probing at 30 minutes. Tilapia has almost no fat to forgive an overshoot: five minutes too long and it goes dry and mealy, so this is a cook to stay next to.

Brine, dry, then smoke

A one hour brine (a quarter cup of kosher salt and a couple of tablespoons of brown sugar per quart of water) seasons the fillet and firms it so it does not fall apart. Rinse, pat dry and let it sit uncovered in the fridge for 30 minutes; the tacky surface is what the smoke sticks to. Oil a perforated pan or a sheet of foil and lay the fillets on it, because tilapia sticks to bare grates and tears.

Which wood

Keep it light. Alder is the classic fish wood, and apple, cherry and maple all work. Hickory and mesquite will bury a fish this mild. One small chunk or a short run of pellets is enough for the whole cook.
