The turkey is the one cook of the year with a hard deadline. Dinner is at dinner time – not “whenever it hits temp.” Tell the planner when you want to carve, and it works backward through the brine, the rub, lighting the pit, and the rest, down to the minute. Every step can go on your phone calendar with alarms.

How long does it take to smoke a turkey?

At 225°F (slow and low), plan on about 6½ hours for birds up to 15 lb, and about 25 minutes per pound above that. Hot & fast at 325°F runs roughly 12 minutes per pound. Spatchcocking (removing the backbone and flattening) is the biggest time-saver there is: about 13½ minutes per pound at 225°F, or as little as 9 minutes per pound at 350°F – a 14-pounder can be done in around 2 hours. Every bird is done at 165°F in the breast – cook to temperature, not the clock.

Whole vs. spatchcocked

Whole is the centerpiece look. Spatchcocked cooks dramatically faster and more evenly (no raw thigh / dry breast standoff) and crisps more skin. If it’s your first turkey or your pit runs small, spatchcock it – your butcher will do the backbone in 30 seconds if you ask. Still torn? Compare spatchcock, hot and fast, and low and slow times by weight and pick the method that fits the hours you actually have.

Should you brine?

Yes – 4 hours minimum, and it’s the difference between good and “who made this turkey?” One warning: check the label first. If your bird says “enhanced”, “basted”, or is kosher, it’s already been salted – skip the brine or halve the salt. Dry the skin completely afterward; wet skin turns to rubber.

The day-before checklist

  • Thawing is the step everyone forgets: a frozen turkey needs about 24 hours in the fridge per 4–5 lb. A 16-pounder = 4 days. The calculator can’t save a frozen bird.
  • Brine tonight if you’re brining (4+ hrs, fully submerged, refrigerated).
  • Check fuel and wood – cherry, apple, and pecan are turkey’s best friends; go light on hickory.

FAQ

What temperature is smoked turkey done? 165°F in the thickest part of the breast, 175°F in the thigh. Juices run clear.

Can I smoke a frozen or partially frozen turkey? No – thaw fully in the fridge first (24 hrs per 4–5 lb).

Should I stuff a smoked turkey? Don’t. Low pit temps keep stuffing in the danger zone too long. Smoke dressing separately.

How long should turkey rest? 30–45 minutes loosely tented. It keeps climbing ~5°F while it rests.

Why is my skin rubbery? Low-temp smoke doesn’t crisp skin. Either finish hot, run hot & fast, or spatchcock at 350°F.

About a third of a whole turkey is frame and bone - the pre-cook loss figure is carcass share, not trimming. Plan 1 to 1.5 lb of raw bird per person; a 14 lb turkey carves for 10 to 12.
