How to smoke smoked beef ribs – time and temp
Smoke beef plate or chuck ribs at 250 to 275 F until they reach about 203 F internal and probe like warm butter, usually 6 to 8 hours. A simple 50/50 salt-and-coarse-pepper rub is traditional. Most pitmasters run them unwrapped the whole way for maximum bark; wrap only if you are fighting the clock.
