Smoking Prime Rib Roast – Time and Temp
A smoked prime rib (standing rib roast) is the ultimate holiday centerpiece: reverse-seared to an edge-to-edge rosy medium-rare with a deep smoky crust. Set your dinner time below and we will plan every step backward so it hits the table perfectly.
How to smoke smoking prime rib roast – time and temp
Reverse sear is the way: smoke the roast at 225 to 250 F until it reaches about 120 to 125 F internal for medium-rare (roughly 30 to 40 minutes per pound), rest it, then blast it hot – a 500 F oven or a hard sear – for a few minutes to set the crust. Carryover brings it to a final 130 to 135 F.
Tips
- Dry-brine with salt 1 to 3 days ahead for the best crust and seasoning.
- Pull at 120 to 125 F, then sear – carryover finishes it to medium-rare.
- Rest at least 20 to 30 minutes before the sear or slicing.
- Slice against the grain; save the bones for later.
