How to smoke smoking prime rib roast – time and temp

Reverse sear is the way: smoke the roast at 225 to 250 F until it reaches about 120 to 125 F internal for medium-rare (roughly 30 to 40 minutes per pound), rest it, then blast it hot – a 500 F oven or a hard sear – for a few minutes to set the crust. Carryover brings it to a final 130 to 135 F.

  • Dry-brine with salt 1 to 3 days ahead for the best crust and seasoning.
  • Pull at 120 to 125 F, then sear – carryover finishes it to medium-rare.
  • Rest at least 20 to 30 minutes before the sear or slicing.
  • Slice against the grain; save the bones for later.

It renders off some fat and moisture in the cook, so figure roughly 1/2 lb of cooked meat per person - a little less if it is a holiday spread with lots of sides. Grade note: 'prime rib' names the cut, not the grade - a USDA Choice standing rib roast cooks exactly the same; Prime grade buys more marbling, not different timing.
