How to smoke smoking spare ribs – time and temp

Smoke spare ribs (or trimmed St. Louis cut) at 225 F. The 3-2-1 method is the reliable path: 3 hours of open smoke, 2 hours wrapped in foil with a little liquid to push through tender, and 1 hour unwrapped to firm the bark and set your glaze. Ribs are done by feel, not temp – look for a bend test where the rack cracks on the surface when you lift it.

Tips

  • Pull the membrane off the bone side first, or the ribs stay tough.
  • 3-2-1 for spares; baby backs need less wrapped time (try 2-1-1).
  • The bend test beats a thermometer for ribs – a 3/4 crack means done.
  • Glaze in the last 30 to 45 minutes so the sugar sets instead of burns.
